Week 21: Nana Loves Chocolate Fondue and YOU

I have no words to describe what I’m feeling! He’s adorable and delicious (isn’t it odd that we use cannibalistic terms like yummy and delicious when we discuss babies?), My daughter is a brave warrior goddess and her partner was amazing! I couldn’t be happier… my heart is exploding!
After 48 hours with no sleep and Mama Bear adrenaline recovery, I can’t deal with a complete blog post, so his week you just get yummy chocolate tastiness, like my new little love munchkin!
This is what I eat instead of chocolate fondue…
Vegan Coconut Cacao Chocolate
The Process:
The converted recipe is clearly not going to be as good as warm melted chocolate with pound cake, strawberries, and bananas for dipping, but it does the trick to satisfy that chocolate and fruit flavor if that’s what you like.
As usual for my desserts, the main goal was to remove white sugar, cane sugar, and corn syrup. To satisfy my sweet tooth, I try to use maple, honey, monk fruit or sometimes, coconut palm sugar. Because I wanted this to be easy, with a creamy texture, maple was the way to go. It’s possible Monk fruit sweetener would work as well.
I chose to use Cacao instead of Cocoa powder, but to be honest I really can’t figure out what the difference is from a health perspective. I’m still doing research.
It literally took me 10 -15 minutes to make a tray of orange chocolate dipped yumminess and the recipients were very satisfied with the results.
Ingredients:
1/2 Cup Cacao Powder
1/2 Cup Melted Coconut Oil
1/4 Cup Maple Syrup to taste
Pistachios (ground or chopped)
2-3 Oranges
Note: you can also use Tangerines or Strawberries
Melt the coconut oil in a double boiler or microwave. Stir in the Cacao powder. Slowly add maple syrup and stir until creamy.
Dip the fruit into the chocolate and lay on parchment paper. Sprinkle with nuts and chill in the fridge for a quick serve. The coconut oil will eventually harden if left on the counter.
You can also spread the chocolate on the parchment paper with nuts and sea salt.
This chocolate is vegan!
